When Sherri and I were dating, you often could find us sailing in Santa Rosa Sound. We would take snacks and sail nearly all day. We were
so hungry at the end of the day.
Sherri’s dad and mom would have grilled chicken, shrimp and a Greek salad waiting when the water had gotten the best of us. Sherri’s dad’s recipe for grilled chicken was simple, but so delicious. He would use bone-in
chicken breasts brushed with olive oil, a little salt, black pepper and garlic. He then would grill it bone side down with the lid closed and never turn it. He called it “Chicken Herrero” .
We continued to make “Chicken Herrero” after we were married. We’ve added a
few more spices and lemon zest, and now we love it even more! We
hope you enjoy our chicken as much as we have throughout the years.
