
Backyard Safari Holiday Appetizers
“Make-Ahead” Party Meatballs
1 pound of Ground Beef
2 teaspoons of Backyard Safari Burger & Steak Seasoning
1 egg beaten
1/3 cup of Heinz 57
Mix all ingredients well. Roll into little meatballs and
brown in a skillet. Let cool and store in a zip top baggie in the refrigerator
or freezer until ready to use.
Heat & Serve!
Quick & Easy Holiday Crackers
14 oz Oyster Crackers
½ Cup light olive or canola oil
2 Tablespoons Backyard Safari Lemon Zest Chicken Rub
(or Seafood Grilling Herbs or Grilled
Corn Rub or Popcorn Seasoning)
2 Tablespoons Dry Ranch Dressing Mix
Wisk together: Oil, Backyard Safari Seasoning & Dry
Ranch Dressing.
Add Crackers and toss to coat.
Store in airtight container and refrigerate overnight.
(keeps for up to 3 weeks in the refrigerator).
Easy Never-Fail Rib Appetizer
Baby Back Ribs
Backyard Safari Smoky Rib Rub
Cut ribs into sections of two. Sprinkle both sides liberally
with Rib Rub. Cover tightly with foil and
Bake in the oven at 250 degrees for 3 hours. Drain
juices from pan and brush with favorite barbecue sauce. Bake at 350 degrees for
an additional 15 minutes. Yummy!
Steak Seasoning
Grilled Steak
- Rub 1/4 teaspoon of olive oil on each side of steak
- Sprinkle 3/4 to 1 teaspoon of seasoning on each side of steak and run into the meat.
- Marinate for 1 hour in refrigerator
- Grill to desired doneness
- Let rest for 5 min. before serving
For a little extra warmth sprinkle on a little red pepper!
*Good on any cut you choose, my favorite is a Rib-Eye, 1 1/4 inch thick, grill for 5-6 min per side on a hot grill!
Flat Iron Steak (Yummy Steak on a budget!)
I found a Flat Iron Steak (about 3/4" thick) at our local Kroger for $4.00. I rubbed each side with olive oil and sprinkled on about 3/4 teaspoon of "Backyard Safari Steak Seasoning" on each side. I then covered the steak with cling wrap and placed it in refrigerator for one hour. I heated the grill to 500 degrees, then turned the grill to med heat and threw on the steak.
2 minutes on each side and the steak was perfectly done.
The thicker section had a nice pink center and the thinner areas with just a line of pink.
Slice the steak across the length at an angle into twelve 1/2" thick cuts, serving 2-3 people . For about $2.00 per serving we had a delicious, tender, and juicy steak dinner. Add a baked potato and a salad, or grilled corn on the cob, and you have a inexpensive meal that is hard to beat!

Grilled Hamburgers
- Mix 1 Tablespoon of seasoning per pound of ground beef.
- Grill on hot grill until desired doneness.
Juiciest Burgers Ever
- 2 lbs. ground beef
- 3/4 cup Heinz 57 Sauce
- 1 1/2 Tablespoons of "Backyard Safari Steak Seasoning"
- 2 eggs (important)
- Place ground beef in mixing bowl.
- Add Safari Steak Seasoning, Heinz 57 sauce, and eggs.
- Mix well.
- Divide into 6 equal patties.
- Handle burgers carefully.
- Carefully place them on a hot grill, then turn temp. to med.
- Cook with lid closed.
- Cook time is longer than most burgers because of the extra moisture.
- Flip the burgers using two spatulas (top and bottom) when juices run out of the top.
- The burgers are so juicy you have to be careful or they will break.
- After flipping, the cook time for the second side is shorter than the first.
- Add cheese and enjoy!

Backyard Safari Chicken Rub
We
think our chicken rub is just about the best thing ever! You
can use it on any chicken cut. Our favorite are the
whole chicken or the bone-in chicken breast.
So easy to prepare! Just loosen the skin and rub olive oil on
and under the skin. Sprinkle our "Backyard Safari Chicken Rub" on, and under the
skin of the breast or whole chicken and roast in oven at 425 degrees. 50 minutes for the breast and 60 minutes for the whole bird.
Even more delicious on the grill and cooking times are similar.
Boneless, skinless breast will require less time in oven or on grill.
Just Sprinkle, Grill, and Enjoy!
Ground Turkey Roll-Up
Brown 1 lb of ground turkey, add 1 tablespoon of "Backyard Safari Chicken Rub" near the end of the browning process.
Spread your favorite condiments on a warmed tortilla (about 10-15 sec in microwave). Place seasoned turkey in the center of the tortilla & roll up like a burrito. Enjoy!
Backyard Safari Seafood Grilling Herbs
- 1 lb. fillet of Salmon (Or your favorite fish)
- 1 tablespoon of Olive Oil
- 1/2 teaspoon of "Backyard Safari Seafood Grilling Herbs"
Prepare as below:
On the Grill
- Place the fillet skin side down in a shallow baking pan
- Rub with Olive Oil
- Sprinkle fillet with 1 1/2 teaspoons of "Backyard Safari Seafood Grilling Herbs"
- Top with 2 to 3 pats of butter
- Grill over low to medium heat until desired doneness. (10-12 minutes)
- Enjoy!
In the Oven
- Prepare the fillet as above
- Bake at 350 degrees for 20 minutes on the middle rack
Shrimp, Crab & Lobster Butter Dip
- Melt 1/2 Cup of Butter
- Add 1 teaspoon of "Backyard Safari Seafood Grilling Herbs"
- Steam, Boil or Broil you favorite seafood.
- Dip into butter mixture. Lick your fingers and Enjoy!

Grilling Corn is sooo easy using Backyard Safari Grilled Corn Rub.
Rub your shucked ears with olive oil, sprinkle on seasoning, wrap in foil, Grill and Enjoy!
